Acid Protease AP-6000 High Concentration Powder Protease Halal and Kosher Certified PRELIMINARY DESCRIPTION Acid Protease AP-6000 is produced from strains of Aspergillusniger through submerged fermentation, extraction and refining processes. It can catalyze hydrolysis of plant and animal proteins under acidic conditions (pH 2.54.0). As a high concentration protease in powder form, AP-6000 has a wide applicationin food industries, includingalcohol, fermentation and brewery, beer and wine production. AP-6000 is also suitable for leather processing, wool coloration and waste film recovery. This enzyme can be further processed into medical-grade protease as anti-inflammatory agents, digestion supplements, or protease reagents. The optimal pH for AP-6000 is 3.0. | The optimal temperature range for AP-6000 is 30 to 50C with 0.5% casein at pH around 3.0 Its optimal temperature is 40C. AP-6000 is unstable above 50C and will be inactivated quickly above 60C. | The enzyme activity of AP-6000 is activated by Mn2+, Ca2+ and Mg2+ The enzyme activity of AP-6000 isinhibited by Cu2+, Hg2+ and Al3+. | - - - - APPLICATION AND BENEFITS - - - - Alcohol | Use of AP-6000 in alcohol production from starch materials can speed up the fermentation and uplift yields of alcohol. | Food Industry | Use of AP-6000 in food industry can help to increase amino acid content of food, thus improve flavors and qualities of bread, cookies, cakes and sausages. | Beer | Use of AP-600 in beer production can decrease the diacetyl content, thus shorten the brewing time. | Animal Feed | Use of AP-6000to hydrolyze proteins of animal feedstuff can help to maximize the utilization of feedstuff. | Leather Processing | AP-6000 Can be used to soften leather, enable easy dyeing, full hand-feel, improve leather and fur luster. | - - - - STORAGE AND SHELF-LIFE Typical shelf-life for AP-6000 is six months if it is stored below 25C in its original packaging, sealed and unopened, protected from direct sunlight. Its shelf-life will be twelve months if itis stored properly at 010C. Prolonged storage and/or adverse conditions such as higher temperatures may lead to higher dosage requirement,therefore should be avoided.
