Overview:

Phycocyanin is a dark blue powder isolated from spirulina. It is mainly found in cyanobacteria, red algae and cryptomonas. Generally, phycocyanin is also divided into C-phycocyanin and R-phycocyanin. The former is mainly present in cyanobacteria and the latter is mainly present in red algae; both exist in cryptomonas. It can absorb light (orange) energy and transfer light energy. It acts as protein and an excellent natural food coloring, as well as good healthcare food.

Phycocyanin is blue particle or powder. It is a protein-binding pigment, so it has the same properties as protein. Its isoelectric point is 3.4. It is soluble in water and insoluble in alcohol and grease. It is unstable to heat, light and acids. It is stable under weak acidity and neutrality (pH 4.5-8) conditions. Precipitation will occur at （pH 4.2) and discoloration will happen in case of exposure to strong alkali.
