Hydroxypropyl methyl cellulose
China [CN] Hydroxypropyl methylcellulose is the propylene glycol ether of methylcellulose. In it, both the hydroxypropyl and the methyl group are combined with the anhydrous glucose ring of cellulose through ether bonds. It is a white to grayish-white cellulose powder or granule and has the property similar to that of methylcellulose, being soluble in cold water but insoluble in hot water. Its solubility in organic solvents is superior to its water solubility. It can dissolve in anhydrous methanol and ethanol solutions, as well as in organic solvents such as chlorinated hydrocarbons and ketones. It is soluble in water, and its aqueous solution has surface activity. After drying, it forms a film. After heating and cooling, it undergoes reversible transformation from sol to gel in sequence. It can be used alone in cold drinks or in combination with other emulsifiers and stabilizers. The maximum dosage in cold drinks is 1%.
